Can data recovery software recover files from the disk with the original folder structure?

So I made a mistake (nobody is perfect) and had to recover data from a disk, I tried third-party data recovery software. While both recovered a good if not almost all the data, it's a complete mess split into two folders, Raw and Labelled. What is the difference? And isn't there a way for this software to recover the disk with the original folder structure at least, and at best the filenames since it's still inscribed in the metadata of the recovered file? Thanks. Help.
